Curd Rice

This is the perfect cooling meal that adults and kids can have on a hot day. To battle the summer heat do include a lot of yogurt based dishes in your cooking. Lassi, chaas and curd rice are easy to make and also delicious. Here is the recipe for some simple curd rice.

 Ingredients

  • Half cup rice (use short grained rice)
  • Half cup curd (yoghurt) at room temperature
  • Half a cup of water or milk
  • Two tablespoons chopped onion, 1/2 tsp grated ginger, 1/4th tsp finely chopped green chillies.

In some South Indian weddings, the curd rice is served with pomegranate seeds. You can try the variation.

Salt to taste

Tempering:

  • 1 tsp oil
  • 1 tsp Mustard seeds
  • 5-6 curry leaves
  • Half tsp chana dal
  • Half tsp urad dal
  • 1 tablespoon of raw peanuts

Method

Cook rice  extra water so that it is soft or else mash the cooked rice when it is really hot. Set aside.

Add salt and the curd and mix well with the rice; add the milk/water to get a slightly runny consistency.

Mix in the chopped onions, grated ginger and chillies

Heat the oil in a small pan, add the mustard seeds; when they splutter, add the dals and hing. Add the peanuts.

When they turn brown, add curry leaves and take off flame after a minute.

Pour over the mixed curd rice. Refrigerate till serving time.

Note: The rice will absorb moisture and become too dry if there isn’t enough of the curd and milk/water in the mixture. You can add a little more water just before you serve it.
